Wild Kiki Sausage with Pineapple and Peppers
Ingredients:
1 package of Pomponio Ranch Meat Kiki Sausage
2 tablespoons oil
1 cup multi-colored mini bell peppers
2 cups diced pineapple, fresh or canned
½ red onion, peeled, cut in half and sliced
Pinch of Korean red pepper
Fresh parsley
Directions:
1. Heat a grill pan over medium high and add a tablespoon of oil.
2. Grill the sausage on both sides.
3. Place the sausage with the pineapple, peppers, and onions on a sheet tray with parchment paper.
4. Sprinkle all with the oil and pepper.
5. Place in a preheated 425 degree F oven and bake until the sausage is done, about 15 minutes.
6. Remove from the oven.
7. Garnish with fresh parsley. Serve with Thai sauce or your favorite French dressing.
***You can serve from the sheet pan or place on a platter with a little bit of bib lettuce. Goes great with rice and salad. ***
