Flank Steak with Chimichurri Sauce

Ingredients for Flank Steak and Chimichurri Sauce:
  • 2 Pomponio Ranch Flank Steaks
  • ½ red onion chopped
  • 1 jalapeño stem and seeds removed
  • 4 garlic cloves, peeled
  • ½ cup of red wine vinegar
  • Pinch sea salt
  • ½ cup finely chopped basil
  • ¼ cup finely chopped flat-leaf parsley
  • 2 Tbsp. finely chopped cilantro or oregano
  • ¾ cup of extra-virgin olive oil

Directions for Grilling your Flank Steak:

  1. Oil your steak and season with salt and pepper or your favorite steak seasoning.
  2. Brush on light layer of your Chimichurri Sauce
  3. Grill at 400° F until desired doneness  (about 8 min for medium rare). For a detailed breakdown of internal temperatures, check here
  4. Remove them and let rest for 10 min.
  5. Slice up your flank steak and spoon over desired chimichurri amount
Directions for Chimichurri Sauce:
  1. Place all ingredients in a food processor
  2. Blend together until you have a smooth sauce.You should still see some chopped herbs it should not be a puree.
