Bacon Egg Breakfast Burrito

Breakfast BurritoIngredients:

  • 1/2 pound bacon ends
  • 1 tsp canola oil
  • ¼ cup green onions
  • 12 eggs, cracked and whisked smooth
  • 4 tortillas
  • Salsa
  • 1 cup grated cheddar cheese
  • 1 avocado, peeled and diced
  • Hot sauce

Directions:

  1. Preheat your oven to 350 degrees.
  2. Bake the bacon ends on a large sheet tray until crispy, about 30 minutes.
  3. Drain off the fat and chop lightly.
  4. Heat the canola oil in a nonstick skillet over medium heat.
  5. Sauté the green onion.
  6. Scramble the eggs with green onion until done.
  7. Season to taste with salt and pepper.
  8. Warm the tortillas in a large skillet to brown them on both sides and make them warm and soft.
  9. Place the eggs, salsa, cheese, avocado, and hot sauce in the tortillas.
  10. Roll up and serve hot.
