Bacon Egg Breakfast Burrito
Ingredients:
- 1/2 pound bacon ends
- 1 tsp canola oil
- ¼ cup green onions
- 12 eggs, cracked and whisked smooth
- 4 tortillas
- Salsa
- 1 cup grated cheddar cheese
- 1 avocado, peeled and diced
- Hot sauce
Directions:
- Preheat your oven to 350 degrees.
- Bake the bacon ends on a large sheet tray until crispy, about 30 minutes.
- Drain off the fat and chop lightly.
- Heat the canola oil in a nonstick skillet over medium heat.
- Sauté the green onion.
- Scramble the eggs with green onion until done.
- Season to taste with salt and pepper.
- Warm the tortillas in a large skillet to brown them on both sides and make them warm and soft.
- Place the eggs, salsa, cheese, avocado, and hot sauce in the tortillas.
- Roll up and serve hot.
